Sarah's Meatloaf

I am a meatloaf fan from way back. Many moons ago we had friends we got together with for dinner once a month and we would take turns making a new meatloaf recipe we came across or created ourselves. I still like trying new meatloaf recipes.

We call this one Sarah's meatloaf because she is the friend who shared this recipe with us. It is simple to throw together when time is tight and the flavor is very good. It is child friendly and the leftovers make great sandwiches. Look at the juice on top; a really moist meatloaf.

Here's the recipe:
2 pounds ground beef
1 package Stove Top Stoving (I use Chicken)
1/2 cup diced onions
1 15-ounce can beef broth

Mix together, shape in an oval loaf in baking dish and cook for 1 hour at 350 degrees F.

Tonight I served it simply with boiled red potatoes and fresh tomatoes and basil dressed with balsamic vinaigrette.

This is my kind of recipe with two little ones around. It sounds yummy and so easy.

is this dry without a classic mushroom or ketchup based sauce on top?
