
While at Costco yesterday with David and our neighbor Deborah I found a package with two gorgeous fresh cod fillets so I bought it. It will make 3 meals for us. I froze 4 pieces of the fillets and cooked up 2 others.

I had no clue how I wanted to prepare them, so I dipped them in 1% milk after rinsing them under cold water, and dredged them in a combination of Italian seasoned bread crumbs and a touch of Parmesan. I cooked them in a skillet sprayed with Pam and 2 teaspoons light tasting olive oil.

We had the cod with chopped spinach with lemon and garlic and fresh Meyer lemon wedges to squeeze onto the fish fillets.
